MUSHROOM CAPSICUM  FRY: (Indian Style with Egg)

This is my first post and I really wanted it to be colourfull. So I have added panner and eggs too in this. But they are optional. It takes less time to prepare and it tastes really good. Even we can mix rice with this gravy and taste it. It goes well even with Dosa, Idly and Roti. After transefering it to a bowl. I often take a handfull of cooked rice and saute in the pan with little of the gravy remaining and eat it hot.

Ingredients

Onion - 1 no,finely chopped
____________________________________________________________________________________Ginger, Garlic grated - 3/4 tsp

Red chilly powder ( dhaniya powder mixed) - 1 tsp

Salt - As needed
_____________________________________________________________________________________Mushroom - 3 nos, finely chopped

Capsicum (Red or Yellow) - Half, finely chopped

Egg - 3 nos , boiled ( optional)

Cilantro - 2 stems ( finely chopped)

Paneer cubes -4 (optional)

To Temper :


Oil - 1 tsp

Mustard - 1/2 tbsp

Jeera - 1/2 tbsp

Fennel - 1/2 tbsp (optional)

Curry leaves- 5

METHOD :


  • Chop the onions, mushrooms, and capsicum finely.

  • First  take a pan and pour oil add the ingredients in the temper table when the oil turns hot. Fennel is optional. Its gives a nice aroma of a non vegetarian dish so I add it. After they start to splutter add the chopped onions and grated ginger garlic and saute well until thee raw smell goes away. Now add the chopped capsicum and mushroom and saute well. Sprinkle some water so that they get cooked. Sprinkle half of the salt now as onions get cooked easily when u add salt.
  • Now add the tomatoes and saute well. Next add turmeric powder, Chilly powder and the remaining salt and saute well. When u feel the contents are cooked well sprinkle little water and keep the pan with its lid closed for 4mins.
  •  Here I have added 4 panner cubes (sauted in an empty pan already) to add more taste and now add the boiled eggs and saute it well. The water remaining shud be absorbed well and u can see the eggs turn to the colour of the gravy. Now add the chopped cilantro and saute it well for 2mins with lid open. Egg is purely optional .

  • Now the Mushroom Capsicum Fry is ready to be served. It goes well with Sambhar, Dhall or even Rasam and Curd.
