Paruppu Pooran Poli (பருப்பு பூரணம் போளி ): 

Poli is mostly prepared during festive occassions and i was inspired by this poli for the first time when i tasted it. There is a small lane in T-Nagar where u can smell the aroma of hot poli in a iyer shop. I have also seen people in the district of Kanyakumari and Tirunelveli preparing Poli every weekend.

Ingredients for Poli:

Maida flour7 all purpose flour - 1 cup

Salt  - 1/4tsp

Ghee/oil - 1/2 cup

Lukewarm water - as needed

Turmeric powder - a pinch

Ingredients for Pooran:



Jagerry - 3/4 cup

Channa dhall -1 cup

Coconut scrapped - 1/4 cup

Ghee - as needed

Cardamon powder - a pinch

Water - 1/2 cup

 Method:

  • First we need to prepare the dough for the poli and set aside because the more it stays the softer poli you get. Add the flour in a cup and add salt, turmeric powder and mix it well. Now knead it well into a dough adding ghee/oil.Make the dough soft and smooth.

  • Set it aside atleast for 4 to 5 hours for softer Poli.
  • Now we need to prepare the Pooran, Take the channa dhall in a cup and place it in a cooker for maximum 3 whistles. Then mash it well.

  • Now take a heavy bottomed vessel and add the jaggery and add water till the jaggery gets immersed. Always break the jaggery into fine pieces and add so that it's easy to dissolve it. When the jaggery has dissolved completely take it off the stove and strain away the impurities and again heat it. 
  • The jaggery will leave froths on its upper surface add the cardamon powder and the scrapped coconut and allow it to boil for 2 mins. Now add the mashed dhall to it and mix it well. Add ghee/oil and mix it up on all sides well. It will now form into a non sticky dough, when all the water has disappeared remove it from the stove and place it in a cup. 

  • Now make small balls out of the dough and out of the pooran and set it in  a plate. The balls should be sized 2:1:: Dough: Pooran.
  • Now take the dough and pat it flat on a greased sheet with your hands. Apply oil on ur hands before you do it, and then place the pooran ball in the middle of the circle and fold it like a money bag from all sides. Gently shape the top side to make it stiff.
  • Now pat the money bag into a thin circle on the same sheet. Do likewise for all the balls.
  • Heat a tawa and add little oil, place the Poli on the tawa and  cook on both the sides. Add ghee/oil on the two sides. Repeat the same for all the dough. Tasty Poli's are now ready.
  • You can also pat it on a banana leaf and turn it upside on the tawa and remove the leaf.
Hot and tasty Poli's are now ready for evening snack or a get-together. One of my relative add little atta with the maida to make it shape easily. U can also add Scrapped coconut and cardamon powder to the jaggery and make Coconut Poli's. It depends on ur imagination and taste.
