Aloo Tikki




Aloo tikki is a indian subcontinent snack made of boiled potatoes, onions and various spices. "Aloo" means potato, and the word "tikki" means a small cutlet or croquette. It is found in almost every chaat shop or stall in Delhi as well as in other parts of India. It is served hot along with saunth, tamarind and coriander-mint sauce, and sometimes yogurt or chick peas.
In Pakistan, aloo tikki is a very popular snack. It is usually eaten with naan and chutney for breakfast or lunch as well as just with tea in evening. It is also the popular in school cafeterias. It is often made during Ramadan time when ending daily fasts.

In Mumbai, a popular version is aloo tikki served with a spicy curry and various chutneys. It is called "Ragda pattice" and is sold on the various chaat stalls throughout the city and especially the Chowpatti Beach.
In the United Kingdom, vegetable tikki is available from delicatessen counters at various shops. It is very popular in the East Midlands area.In Delhi, "chandni chowk" is known for its aloo tikki and other chaats.

Ingredients



Potoatoes - 2 medium sized

Asafoetida - 1 pinch

Chilly powder( dhaniya powder mixed)- 1/2tsp

Turmeric powder - 1 pinch

Spring onions - 1/2 cup

Corn flour / Rice flour / bread slice - 1 tbsp

Coriander leaves - 1 handfull

Bread Crumbs - 1 plate

Chaat masala - 1/4tsp (optional)

Ginger powder - 1pinch (optional)

Garlic powder - 1 pinch (optional)

 Oil - for frying

 Method:

  • First wash the potatoes and cook them well. Mash them finely and allow it to cool completely.
  • Add the salt,asafoetida, chily powder, turmeric powder, cornflour and green chilly chopped finely to the mashed potatoe and mix well. I have added only the above ones. You can add garlic powder, ginger powder, chaat masala, or anyother too according to your taste.
  • Take a pan add 1tbsp oil and saute the finely chopped spring onions and add them to the mashed potato and mix well.
  • Now grease your hands and take one lemon sized ball ou of the dough and pat it on ur palm into a round shape (similar to cutlet) and place it on the bread crumbs. Bread crumbs give a crispy taste, so I have added, Its purely optional.
  • Roll the tikkis on the bread crumbs and shallow fry it in a non stick pan.
  • Fry it equally on both sides and drain it in a towel. Serve them with any chutney!!
