Ghee Rice

Rice is a staple food in South India and there are many receipe with direct use of rice or with indirect use of rice in forms of flour. However amon all the recipes Ghee rice is simply heavenly and tastes awesome. It requires ver less time and very less work. This is not mixing ghee into rice, its prepared using spices and nuts sauted in ghee with rice and then its steamed to bring out the flavours. Now lets prepare this receipe.

Ingredients



Basmati Rice - 1.5 cups (I have used Jasmine Rice)

Ghee - 2 tbsp

Nuts / Raisins  few

Onions - 1 medium sized

Ginger garlic paste - 1 tsp

Curd - 1/2 cup

Milk - 1/4 cup

Salt - needed

Mint leaves - handfull

Coriander leaves - 1 handfull

Green chilly -1 no

Spices - Cinnamon stick - 1 small piece

Bay leaf - 1 no

Star anise - 1 no

Cloves - 3 nos

Black cardamon -1 no

 Method:

  • First wash the Jasmine rice and soak in water and set aside. You can use plain Basmati rice. I have used Jasmine rice because of its aroma.
  • Now chop the onions vertically, and slit the green chilly vertically.Take a pan, add the ghee and when its melted and hot add the spices and saute a little. Now add the onions, green chilly, mint and saute well.
  • Mix the curd and milk in a cup and whisk well with a fork and set aside.
  • Add the ginger garlic paste to the pan and saute well, add salt and mix well. Add curd and mix well and allow it to boil for 3 minutes.
  • Now add 1.5 cups water and mix well. Allow it to boil, when the water boils add the rice slowly. 
Now if ur using a cooker : Slow the flame to minimum and close the lid and put on the whistle and set it for 15mins. Else on a medium flame put on the whistle and after 1 whistle simmer the flame and allow it to stay for 5 minutes and then switch it off.

Now if ur using a rice cooker, transfer the watery mixture to the Rice cooker vessel and add the rice with 1 tsp ghee and cook it.

  • Now Ghee rice is ready, garnish with coriander leaves and  1 tsp ghee. Serve with any gravy. I have served with Egg curry.
