Egg Curry (Potato optional)

Egg Curry (முட்டை குழம்பு) :

 I have given facts about egg in my previous posts. Egg curry is one of the easiest receipe to have with Rice/Chapathi/Idly/Dosa. Vegetarians can skip the egg and add Potatoes instead. Now lets see the process:

Ingredients


EGGS- 4 nos

Tomatoes - 1nos

Green chilly-1 no

Salt - as needed

Turmeric powder -1/4 tsp

Chilly powder(Dhaniya pow mixed) - 3/4th tbsp

Garam masala - 1/4tbsp (optional)

Cilantro leaves- needed

Small onion shallots - 5nos (or) chopped onion-1/2no

Tomato puree - 1tbsp (optional)

                                                    To  Grind :

Onion- 1 no

Ginger - 4pieces

Garlic - 4 cloves

To Temper :


Oil - 1 tbsp

Fennel -1 tsp

Cinnamon - 1 small piece

Star anise - 1 no

Eliachi - 1 no

Cloves - 3 nos

Bay leaf - 1 no

Black cardamon - 1 no

Method:

  • First grind the onion. ginger, garlic in a mixer to a fine paste.
  • Chop the  tomatoes and grind it. Keep the tempering ingredients ready. Boil 4 eggs with 1/4tbsp salt to prevent cracks in eggs.
  • Pour oil in a kadai and add the ingredients in the temper table. Add the small onions and saute till it turns translucent.And when it splutters add the green chilly (slit vertically), ground paste and mix well.Saute until it comes to a state of non-sticky halwa.
  • Now grind the tomatoes and add its paste. Add 1 tsp tomato puree and this step is optional.Puree is added to get that bright red colour. Saute well until it comes to a halwa consistency.
  • Add the  chilly powder, turmeric powder and garam masala (optional) and mix well. Now add 3 cups water and allow it to boil well. As we have grinded onions the gravy will be thick so you dont have to worry about adding water. When it boils well add the cilantro leaves and the boiled eggs. Make vertical slits 4 nos on the egg this helps the gravy to enter inside the eggs.
  •  Switch of the flame when you see the eggs turn into the colour of the gravy. Now the Egg curry is ready to be served. If you are a vegetarian add half-boiled potatoes chopped and follow the same steps.
